Alginates are extracted from brown algae which is found in cold water regions. Alginate is water soluble.
In combination with calcium ions, alginate forms heat-stable gels with different degrees of firmness. Alginate gel is irreversible. This property makes it attractive for various applications in the food industry. For example, in aspic, pudding powders, fruity spreads, ice cream, fillings for bakery products and meat products.
