Carrageenans are extracted from red algae found in both warm water and cold water regions. Carrageenans are water soluble. Carrageenans can form gels with different degrees of firmness. Carrageenan gels are reversible.

The three main types of algae are:

  • Kappa
  • Iota
  • Lambda

Each of these forms has different solution and gelation properties. Different types are often mixed together in order to achieve the desired function. Carrageenans are found in milk products, shakes, fillings for bakery products, beverages and meat products.
